Egg Bites

Silicone cupcake pan (12 capacity)

Cookie Sheet

Boiling water

14-15 large eggs

Milk about ½ cup or so

Salt pepper

Mix in’s (broccoli, onions, peppers, bacon, sausage the list is limitless)

Grated Cheese or your choice

 

Pre heat oven to 350

Put eggs, milk, salt and pepper in bowl, mix with a hand mixer till all ingredients are combined.

In the cupcake pan, put some of the mix in’s in along with cheese. As much as you want, I usually fill the cup ¼-1/2 full

Pour some of the egg mixture on top, don’t fill the cups fully yet

With a spoon mix up the eggs with the mix in’s

Top with more egg mixture and more cheese

Put cupcake pan on the cookie sheet

Put into the oven, and pour the hot water into the cookie sheet about ½ way up the side

Bake for 15 minutes

Remove the pans from oven, pour out the water from the cookie sheet and put them back into the oven still on the empty cookie sheet

Bake for 8-10 minutes till the egg bites look like popovers.

Remove from oven and cookie sheet

Let cool 5-10 minutes in the cupcake pan

Remove from pan and let cool on wire rack

Once cool they can be refrigerated or frozen
